Homemade Marshmallow Recipe

here is a receipe on homemade marsmallow


Ingredients you need:
2 envelopes powdered gelatin
1/2 cup + 1/3 cup cold water
1 cup sugar
1/3 cup light corn syrup
4 egg whites
pinch of salt
2 teaspoons vanilla extract
about 1/2 cup powdered sugar and 1/2 cup cornstarch, sifted together
How to you do it:
1. In a small bowl, sprinkle the gelatin over the 1/2 cup of cold water to dissolve and soften.

2. In a saucepan fitted with a candy thermometer, mix the sugar and corn syrup with 1/3 cup of water. Place over medium-to-high heat.

3. In the bowl of an electric mixer, pour in the egg whites and beat on low speed until frothy. Add the pinch of salt.

4. When the syrup reaches between 210 and 220 degrees, increase the speed of the mixer and beat the whites until they are thick and fluffy (do not overbeat).

5. When the syrup reaches 245 degrees, while the mixer is whipping, pour the syrup into the whites. Pour so that the syrup does not fall on the whip, otherwise much of the syrup will splatter onto the sides of the bowl, not into the egg whites.

6. Scrape the gelatin and water into the pan that you used for the syrup and swirl it to dissolve (it should be hot enough from the syrup to dissolve it). Pour the liquified gelatin into the whites as they are whipping. Add the vanilla and continue to whip for 5 minutes.

7. Dust with a sifter a 11x 17 (approximately) baking sheet evenly and completely with cornstarch mixture. Use a spatula to spread the marshmallows in a layer on the pan. Allow to dry for at least 4 hours or overnight, uncovered.

8. Use a sharp knife or scissors to cut the marshmallows into pieces and toss in the powdered sugar and cornstarch mixture. Put the marshmallows in a colander or strainer and shake off the excess cornstarch mixture.

Shaping your own chocolate candy

Troubled finding a Valentine's gift ? Take a look at our recent collection the "Valentine's Day Special", who knows you might just find the right gift!

For those who have limited budget and are clueless on how to make chocolate, dont be worried you do not need to start from the scratch to make nice chocolates. We will be sharing with you some simple tips on how to re-mold the chocolate you brought into the shape you want :)

1. Select your favourite chocolate mold. For example a heart shape mold as shown below.


2. Break the chocolates you have brought into small pieces. This will help to melt it quicker and more evenly. You can use a cutting board and a large sharp knife to do the job and you are ready to prepare your chocolate for melting.

3. You can either melt the chocolate using a double boiler or a microwave. Be sure to keep any moisture away from your chocolate as you melt it.

Using Mircowave: Place your chocolate pieces in a microwave safe bowl and heat at medium for a minute. Stir the chocolates repeatedly until the chocolate is completely melted and smooth.
Using Double Boiler: Heat the water in the bottom pan of the double boiler with low heat, do not boil the water. The water should not be touching the base of the upper pan or bowl. Place the chocolate pieces in the top of the double boiler and stir it repeatedly until it starts to melt.

4. The chocolate is ready to be poured into the molds. To make this step easier, fill up the mold using a plastic squeeze.

5. Tap the filled molds on the table a few times to remove any air bubbles in the chocolate. Place the mold in the freezer for approximately 10-15 minutes. Check that the candy mold are clear and has released itself from the bottom of the mold. *Appearance of chocolate will looks better if you over chill rather than under chill when molding chocolate.

6. Turn the chocolate candy mold upside down and gently tap them on the table top covering with wax paper, molded chocolates should drop out automatically. You are done on shaping your own chocolate candy, put it in a nice box and you are ready to give it to your loved ones:)
